The Royal Exchange is launching a Japanese pop-up menu to celebrate head chef Piero Leone being named winner of the Seven Samurai Chefs challenge in collaboration with Japan's only 5-star airline, All Nippon Airways (ANA).

The pop-up menu will feature a range of small plates all served in traditional Japanese style, and available in the Grand Café and Threadneedle Bar. Dishes available include spicy crab salad with ponzu, sriracha, ginger and mango; smoked salmon and seaweed tartare oshi-sushi with pickled gari, soya foam and black carasau; and Tuna tataki lollypop with sesame and ginger dressing. In keeping with the Oriental theme, a menu of sake from Shirakabe-Gura will be available to sample alongside the dishes, as well as Japanese whiskies, beers, and cocktails.

As part of the Seven Samurai Chefs challenge, Leone toured Japan alongside six other UK chefs, and then created a personalised version of the traditional Japanese rice bowl dish, donburi. Leone’s winning Donburi N7 included calamari, scallops, and prawns; a variation of f this winning dish will be available on the menus at the Royal Exchange’s Sauterelle restaurant for the duration of the pop-up.

The Japanese menu will be served in the Royal Exchange’s Grand Café and Threadneedle Bar from 4pm, Monday-Friday; July 25th to the beginning of September.
