You may not be aware that the Chinese New Year (of the Rooster) begins on 28 January, but you should most certainly be thankful of the fact. That’s because Michelin-starred restaurant HKK has launched its Chinese New Year tasting menu and the dishes are worth bringing out the fireworks for.

The eight courses contain many delights. Such as the three Touch of the Heart dumplings, separately filled with lobster, king crab, and sea bass and shrimp, which are served with a paintbrush to delicately apply the sauce. Green, white and yellow, they turn your dish into a miniature art work, only unlike a Jackson Pollock they taste delicious.

Or there’s the Eight Treasure Chicken, which arrives in a parcel and must be carefully unwrapped, then filled with a warm broth. Filled with guinea fowl and mangalica ham, you would certainly eat eight of them.

But the unquestionable highlight is the Imperial Cherry Wood Peking Duck. On a miniature pancake base, it’s layered with foie gras and topped with the richest, most succulent cut of Peking duck you can possibly imagine. ‘Melting in the mouth’ tends to be an idiom, but the duck really does seem to melt as you chew on it. Cherish both pieces, then spend the rest of the week pining over the flavour.

The tasting menu is expertly paired with a selection of drinks, ranging from Pink Sake to red and white wines to a final glass of Glenmorangie Signet. There’s also a non-alcoholic option for the teetotallers in the party.
